Is it possible to encrypt notebook so encrypted data are sent into simplenotes account instead of plain text?

Unfortunately, no. Encryption means that the local db file gets encrypted and nothing else. If you need uttermost privacy, it would be better to avoid Simplenote. You can trying syncing the whole db file over Dropbox. Yes, it will lead to conflicting copies appearing sometimes. But they can be imported back into the main file and then deleted.
